Irish Soda Bread for St. Patrick's Day

Happy St. Patrick's Day!  

Last night I was having a major carb craving getting into the holiday spirit by baking some irish soda bread.  I've never made it before so I googled irish soda bread and chose this recipe from Simply Recipes.
Ready to go into the oven.
The bread is really easy to prepare and only took a few minutes to mix up.  The recipe calls for common household ingredients that you probably have on hand.  Remember that if you don't have buttermilk in the house, you can make some by mixing lemon juice or vinegar with milk.  You can go here for the formula.

The recipe cautions not to over knead the dough or the bread will come out tough.  My bread was a little tough and crunchy on the outside so next time I'll remember not to handle the dough as much.  The kids enjoyed eating it for breakfast so it must taste OK!

  1. Mix up a batch of honey butter for your Irish Soda bread.....it's great. Whip up equal parts of butter, honey and confectioner's sugar. I've seen recipes with just the honey and butter, but the xx sugar makes it creamier and of course, sweeter :o). So good on Irish Soda Bread!!
